Chocolate and Orange Muffins

You will need (for 14 muffins):

  • 90g butter
  • 225g sugar
  • 2 eggs
  • 275g white flour
  • 150g yogurt [1]
  • 150g dark chocolate
  • 1 tea spoon of bicarbonate
  • the zest from one orange
  • 5 table spoon of freshly squeezed orange juice [2]

Preheat the oven at 190oC.

Mix the slightly melted butter with the sugar until you get a mousse.

Add the entire eggs, the orange juice, the zest and the yogurt and mix. You should get a fairly liquid batter.

Add the flour and the bicarbonate and mix well until the batter mix is even.

Split the chocolate into small pieces with a knife. Do random sized/shaped pieces smaller than 1cm.

Place cake cases in each slots of a muffin tin [3] and put in each of them a generous table spoon of the muffin mix.

Cook in the preheated oven for 25min and check with a knife that they are well cooked inside.

[1] That’s the usual size of individual yogurt pots

[2] one orange should do, but it varies

[3] if it’s less than 14, you can do 2 batch
