Gnocchi di patate

 
I had never tried this one yet and thought it would be quite hard, but actually, if you are quick enough, it’s easy.

Ingredients for 3 persons:

  • 400 gr. potatoes
  • 100 gr. flour
  • 1 egg

Everything has to be done quickly while the potatoes are still hot, so be careful not to burn your fingers.

  1. clean and boil the potatoes with their skin: Put the potatoes in the cold water and boil for around 20 minutes,
  2. skin the potatoes directly when you get them out of the water. Be careful and hold them with a fork or a piece of cloth,
  3. mash the potatoes,
  4. add the egg and mix quickly before it cooks with a wooden spoon,
  5. add 2/3 of the flour and mix with the wooden spoon,
  6. on a clean surface, lay the rest of the flour and work the dough until you get a nice elastic consistency, merging with the rest of the flour,
  7. cut the dough in four pieces and roll each of them on the floured surface in 1cm thick rolls,
  8. cut the rolls in 3cm long pieces and place them on a tray,
  9. sprinkle with olive oil,
  10. cook in salted boiling water for 3-4 minutes until they float at the surface of the water.

You can now eat them as a side dish with butter and sage or as a main dish with a sauce (tomato, ragü, etc.)
