Ingredients for 3 persons:
- 400 gr. potatoes
- 100 gr. flour
- 1 egg
Everything has to be done quickly while the potatoes are still hot, so be careful not to burn your fingers.
"Gnocchi di patate" by ilmungo [?]

- clean and boil the potatoes with their skin: Put the potatoes in the cold water and boil for around 20 minutes,
- skin the potatoes directly when you get them out of the water. Be careful and hold them with a fork or a piece of cloth,
- mash the potatoes,
- add the egg and mix quickly before it cooks with a wooden spoon,
- add 2/3 of the flour and mix with the wooden spoon,
- on a clean surface, lay the rest of the flour and work the dough until you get a nice elastic consistency, merging with the rest of the flour,
- cut the dough in four pieces and roll each of them on the floured surface in 1cm thick rolls,
- cut the rolls in 3cm long pieces and place them on a tray,
- sprinkle with olive oil,
- cook in salted boiling water for 3-4 minutes until they float at the surface of the water.

You can now eat them as a side dish with butter and sage or as a main dish with a sauce (tomato, ragü, etc.)
