In total, it took me two days to compile, but I didn’t really spend two days in front of my computer. It was compiling all alone in the back, day and night, stopping sometimes to tell me that I had to do something.

HOWTO: Install and run Amarok on OSX probably gives the nicest walk through on how to install Amarok.
Note: I couldn’t install gstreamer [1] when I tried, so when you are asked for it, select amarok-xine as package to install, you’ll save a lot of time trying to find what’s wrong.
When you are done compiling, you can launch your X11 and start Amarok from its terminal. This is not very handy, so I used Platypus to make a "fake" OSX .app that will launch Amarok for you and ensure that X11 is running correctly [2]. Note: this application does not contain Amarok and you still need to install it first via Fink.

I just hope they update libxine1 on fink for leopard, as this doesn’t compile for me (therefore no Amarok on leopard) and is the sole reason why I’m still using tiger!
